    Ricotta is made from the whey leftover frrom cheese making. What u make is a kind of cheese called "queso blanco" in Spain and "Paneer" in India, nothing to do with real ricotta, shame !!!

    This light colored pasta fagioli is hard to find! I specifically was looking for this recipe! I’ve been to a few restaurants in my life that make it this way. I like it better then the darker color pasta fagioli with beef and veggies. This one is simple and delicious!

    SCARPACCIA (aka savory zucchini bread) . You're gonna want to come back to this #recipe again and again! This one comes from @annafgass new book #italiansnacking - we can't wait to cook our way through it but I started here and she was happy to let me share it with you! . Makes 1 9-inch cake 1/2 C. evoo 2 C. AP flour 1 C. Parmiggiano reggiano 1 tsp. salt 1/2 tsp. baking soda 1/2 tsp. baking powder 3 eggs 2/3 C. milk 1 C. toasted pine nuts 2 small zucchini, sliced into rounds 6-7 basil leaves, sliced into thin ribbons *Preheat oven to 375°. Brush the bottom of a 9-inch springform pan with oil, line with parchment paper, and brush the paper and sides of the pan with oil. *In a large bowl, whisk together the flour, half of the cheese, salt, baking soda and baking powder. *Make a well in the middle of the flour mixture and add in the eggs, the oil, and the milk. Mix to incorporate. *Fold in the pine nuts and all but about 20 slices of zucchini (save these for the top!). Fold in the basil. *Transfer the batter to the prepared pan and spread evenly. Top with remaining cheese and zucchini slices. Drizzle with evoo. Bake for 45 to an hour, or until cheese and zucchini on top begin to brown. *Cool completely before serving. #carascucina #italianfood #italiancooking #recipevideos #easyrecipeideas #baking #zucchini

    The best I ever had was at Pizzaland in North Arlington, NJ, my home town. Yes, the famous Pizzaland from the Sopranos intro. The original proprietor (we called him Fred) of Pizzaland was an Italian immigrant who made great pizza and sandwiches.

    Love these comments 😂 I can't get over the fact that a hot dog is the most North American thing i can think of...You can put what ever you want on it, but you cant call it Italian. Most real Italians wouldn't know what a hot dog is... I guess you could call it an American Italian hot dog if that makes people feel better. Lol

    Hot Dogs and potatos need to be fried in oil as well. All ingredients of an Italia hot dog need to be fried to be true to the original recipe.

    Yes my Grandma made it with the leftover pasta sauce. She used red kidney beans. Our Italian family called it Pasta fagiola! Your version here is very simple just like what I'm used to. Only thing I do is add a little bit of basil and parsley as well as the oregano. I enjoyed your video. Others I've seen put too much in it. Why all the vegetables? We're not making minestrone. I never considered this dish to be a soup in the first place. Pasta fagiola is pasta and beans in a light creamy broth.

    It actually does matter what color the lentils are, sort of. The larger and flatter brown or orange lentils used in soups and Indian cuisine cook much faster and softer and can break down and become creamy. There are also smaller, rounder lentils like green French le puy or black Italian lentils that take longer to cook and don’t get as soft and creamy. These black Italian lentils ate sometimes called beluga due to they’re resemblance to caviar. They are what I’ve found in most often in Italian lentil dishes. Le puy are very similar. They are both very different from the brown lentils used here.

    This is interesting. My family has made this every winter since I was a kid. My family always made it with anchovies and sardines. I have never had it with just anchovies. It still looks delicious. I am not sure why the sardines were added. The only thing I can think of is during the depression, maybe anchovies were harder to come by or more expensive.

      Nope! I never put oil in pasta dough. Salt I will use and can be added here but I think people should taste the flour first and see. You can always salt the cooking water and the finished dish itself

      A lot of Italian Americans speak an older form of dialect that didn't develop the way modern Italian did. We speak our grandparents dialects and lingo - it's definitely not proper, but it's ours! There's some great articles about how the NY/NJ Italian -American dialect and accent developed
